I do love Italian Sausage, but I’m not so hot on the popular brands which often contain corn syrup, monosodium glutamate, and other questionable additives that are usually on the ingredients list for store bought Italian Sausage.
Thankfully, it’s unbelievably easy to create your own homemade Paleo Italian Sausage recipe in a matter of minutes, and the good news is you probably have most of the spices in your pantry already!
What spices are in Italian Sausage Seasoning?
The spices can vary depending on your preference, but I think the inclusion of ground fennel, garlic and some crushed red pepper flakes is a must in getting that classic Italian Sausage flavor.
You can adjust the level of red pepper flakes included in the mix easily enough, the amount I have included makes a very mild sausage mix.
My kids do not have a high tolerance level for hot food, so I just added some more pepper flakes on top of my sausage when it was cooked, and omitted it from theirs.
How do you make Keto Italian sausage?
The spice mix can keep in an airtight jar for months before it loses much flavor.
So all you need to do is mix it up and add it to your ground sausage meat either when you take it home from the grocery store and then you can freeze it in patties or meatballs ready too cook.
Or you can simply keep it in the jar and use it as required, it’s really up to you!
The nice thing about this Keto Italian sausage seasoning is that’s it’s very easy to adjust it to your own tastes.
I’ve deliberately kept the amount of salt low so that you can adjust it up if you prefer, and there’s no added sugar to keep it low carb, Keto, Paleo, and Whole30 compliant.

Keto Italian Sausage Recipe
Easy recipe for Keto Breakfast Sausage with Italian Seasoning.
Ingredients
- 2 lb ground pork
Seasoning Blend
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp dried thyme
- 1 tbsp oregano
- 1 tbsp ground fennel
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 2 tsp crushed red pepper flakes , mild – add more to taste
Instructions

Mix the seasoning blend ingredients together in a small bowl.

Mix the seasoning evenly into the ground pork, this is enough for 2lb pork.

Form even sized patties with your hands, I made 12 patties from 2lb pork but how many you get will depend on what size you make the patties.

Cook the sausage patties in a medium skillet for about 3-4 minutes per side or until they are fully cooked all the way through. Exact cook time will depend on how thick you make them.
