There’s really nothing to this recipe, you mix it up and cook it in less than a minute, it really is that simple to make a keto chocolate mug cake!
Start by making sure that the mug you choose is large enough, is microwave safe, and has no chips or cracks in it.
You can use any low carb sweetener you prefer, just make sure you like the taste of it and know how it cooks up. I prefer Lakanto Monkfruit or So Nourished Blend.
Microwave cook time will vary depending on the power of your model, so cook it for 45 seconds and then check it and add 5-10 more seconds cooking time as needed.
If you have low carb chocolate chips you could add a tablespoonful to the batter, and if you have whipped cream that would make a wonderful topping!

In a microwave safe coffee mug mix the melted butter, almond flour, low carb sweetener, cocoa powder, baking powder, and beaten egg.

Mix well until combined.

Microwave on high for 45 seconds and check to see if it is cooked, it should be firm to the touch, if not cook for 5-10 more seconds. Do not overcook or it will be dry, exact cook time depends on the power of your microwave.

Top with keto chocolate chips and whipped cream if desired.
