Salsa Verde Chicken is so quick and easy to make, plus it’s healthy and has only 9g of carbs per serving.
All you need is a ready made jar of salsa verde and a few other simple pantry ingredients.
Throw it all together in a casserole dish, bake in the oven then top with cheese and before you know it, you’ll have a delicious dinner of Salsa Verde Chicken your whole family will love.
How to Make Salsa Verde Chicken
Start by choosing a quality salsa verde, there are many options in the grocery store so it’s not too hard to find one that you like.
Next add the salsa verde to a casserole dish and add the chicken, I found it worked better when the chicken was fully submerged in the salsa, so ignore the photo!
Then, simply brush the chicken with a little olive oil and season with salt, pepper, and garlic (see recipe card for amounts)
Bake the salsa verde chicken for about 30-40 minutes or until chicken is cooked, then top with a grated cheese such as Monterey Jack, then broil for a minute or two until the cheese melts.

What Can you serve with Salsa Verde Chicken?
I ate mine with Cilantro Lime Cauliflower Rice, but regular white or brown rice would work too. It’s also nice with a large green salad served on the side.
