Cauliflower Cilantro Lime Rice is a fantastic substitute for real rice, it has way less calories and is perfect for people on a Paleo, low carb or Ketogenic diet.

Add the oil to a cast iron skillet or similar pan and saute the onion for four minutes on a medium heat
Next, add the riced cauliflower and garlic, stir well, and cook for five to seven minutes. You can put a lid on to allow it to partially steam for the last 5 minutes.
When the cauliflower rice is cooked remove it from the heat and mix in finely chopped cilantro, lime juice, lime zest, and season with salt and pepper.
BOX GRATER - you can simply grate the cauliflower in large pieces by hand to make rice, but it can be kind of messy.
FOOD PROCESSOR - put the cauliflower in chunks in the food processor bowl with the blade and pulse to make the rice. Or, I prefer to use the large grating disk and feed it down the tube as I find I'm less likely to over process the rice.
NUTRITION FACTS - the calorie and carb counts are approximate and may vary depending on the brands you use. The onion and garlic make up the bulk of the carbs in this recipe so if you want to reduce them further you could eliminate them, though that will also affect the finished flavor.
