The most AMAZING Chicken Fajitas! they are gluten free, you can whip these up for an easy weeknight family meal!
Put the marinade ingredients into a large ziploc type bag and add the sliced chicken pieces. mix it all together in the bag to make sure the chicken is fully coated in the mixture.
While the chicken is marinating prepare the vegetables.
Heat a skillet with half the oil and add the chicken, cook, stirring frequently until chicken is fully cooked through.
Remove chicken to a plate, now add a little more oil to the skillet and cook the vegetables
While the vegetables are cooking you can warm or toast the corn tortillas, I like to 'toast' them in a dry skillet.
Once the vegetables are cooked add the chicken back to the pan and warm it all through.
Serve immediately with the tortillas and any combination of salsa, guacamole, sour cream, and shredded cheese.
