Sauté diced onion, sliced celery, and garlic in 2 tbsp olive oil in a large soup pan over a medium/high heat for about 3-5 minutes until soft.
Add the gluten free chicken broth, crushed fire roasted tomatoes, and chopped chicken thighs and stir well and heat until simmering.
Next add in the shredded cabbage, salt, and pepper, Add more chicken broth if it's too thick.
Cover and reduce the heat and continue cooking on a medium low heat for 45 minutes.
Taste and adjust the seasoning as needed.
Nutrition - Serving size is 1 cup (250mls) and the nutrition is calculated assuming it will make approximately ten or more cups of soup total.
Cabbage - I used this savoy cabbage but any green cabbage will do. Purple cabbage may take a little longer to cook.
Chicken - You can use either chicken breast or chicken thighs, whatever you already have. The soup will have more flavor if you cook the chicken in the soup as opposed to adding in precooked chicken.
Tomatoes - Fire roasted tomatoes really add to the flavor of the soup, but you can use any canned crushed tomatoes if you can't find fire roasted.
