This might be the easiest way ever to make rice pudding, it's quick and creates the creamiest dessert ever, with dairy free options.
Add un-rinsed Arborio rice to your Instant Pot (or any brand of pressure cooker) along with 1.5 cups water and the salt. See recipe notes for cooking instructions for other types of rice.
Lock the lid, turn the steam release vent to 'sealing' and using the manual setting, adjust it to cook for 4 minutes at High Pressure.
Whisk the egg and add the milk, sugar, vanilla and mix well to combine.
When the cook time time is complete allow the unit to reduce pressure on its own without opening the steam release vent (Natural Pressure Release) for about 10 minutes, then carefully release the rest of the pressure by opening the vent before opening the lid.
Turn on the saute function on your pressure cooker and add the raisins, cinnamon, and milk mixture to the cooked rice.
Stir well and cook for two to three minutes, and then turn off the saute function.
You can serve it hot right away or cool and keep for later, it will thicken up more once it cools down.
Types of Rice - works best with short grain rice such as Arborio as it's higher in starch than other varieties and is perfect for this recipe . You can use other varieties but they may not thicken up quite as much. Please note that for Jasmine and Basmati rice use only 1 cup/250mls water, this is less than you'll need for Arborio.
Milk - You can use any milk you prefer including non dairy, but some milks will give 'creamier' results than others.
