Easy Honey Garlic Salmon with lime juice and coconut aminos making it perfect for gluten free and paleo diets.
Preheat your oven to 375°F
Mix together all the marinade ingredients and mix well to combine.
In an oven proof dish add the salmon fillets skin side down and pour the marinade evenly over the salmon, then turn them over (skin side up) so that they are partly immersed in the marinade. Choose a small enough baking dish (see photo) where the salmon will be tightly packed so that it will cook in the marinade.
If you have too large of a baking dish then they won't be as flavorful as the marinade will spread out. If you don't have a suitable baking dish a foil packet with the marinade poured in would work well too.
Marinade salmon for 15 minutes.
Bake for 12-20 minutes, exact timing will depend on the thickness of the salmon and how well done you prefer it.
If you want extra sauce to pour over the salmon after it is cooked, I recommend making double the marinade and pour half over the fish as described above and reserve the other half and simmer it on the stove in a small pan until it gets thick and sticky which will only take a couple of minutes.
Nutrition - does not include extra pour over sauce. Serves 4
Coconut Aminos - popular in paleo cooking this is a great substitute for soy sauce. However, you can use soy sauce instead and I recommend that you opt for a gluten free low sodium option otherwise it may be overly salty. If you don't have low sodium 1 tbsp may be enough, taste it and see what you think before you add to the salmon.
Limes - works best with fresh lime juice
