Easy Instant Pot Honey Garlic Chicken that is tender, tasty, and a recipe your whole family will love!
Season chicken thighs with salt and pepper on all sides.
Use the saute setting to brown both sides of the chicken, then remove from pot, or you might find it easier to brown them in a non stick pan.
Mix all the sauce ingredients together and pour in the pot, return the chicken to the pot
Cook for 8 minutes on high pressure, then let the pressure release naturally for 10 minutes and release remaining pressure and open the lid.
Remove chicken and set aside. To thicken the sauce or add 1-2tbsp cornstarch mixed with cold water. Turn on the saute function if you need to, to reheat the sauce.
Rinse two measuring cups of basmati or jasmine rice (not rice cups) until the water runs clear
Place a tall trivet over the chicken pieces and sauce in your electric pressure cooker.
Add the two cups (not rice cups) of rinsed rice along with two cups of water to a stainless steel container suitable for cooking rice in a pressure cooker, and a little salt. I added an extra tablespoon of water per cup to make it a little softer.
Cook the recipe as directed above.
To make this recipe paleo simply substitute the soy sauce for coconut aminos, and use a paleo friendly starch such as arrowroot or tapioca in place of the cornstarch.
