  1. Preheat the oven to 400F
  2. Line a sheet pan with parchment paper
  3. Toss carrots in olive oil, garlic, salt and pepper

  4. Bake for 15 minutes then sprinkle on the Parmesan cheese.
  5. Bake for a further 5-10 minutes until carrots are soft and the cheese is melted.

  6. Remove from the oven and serve hot.
