Fresh Pineapple Salsa is a perfect accompaniment to any grilled meat dish!
It’s Spring Break here and we’re at the beach with our coats on! It was freezing the night we arrived and it’s warmed up a little since then but when the sun hides behind the clouds and with the wind on the beach it’s still a little nippy.
It reminds me of Scottish summers at the beach where the weather was a good deal more unpredictable than here and we spent many trips sitting in the car looking at the view because it was raining or too cold to get out.
As we’re on vacation dining al fresco is obligatory even if the weather is not quite what we’d hoped for. We made my Grilled Ginger Sesame Salmon on the grill a couple of nights ago and this fresh pineapple salsa to go with it.
My fresh Pineapple Salsa is lovely with fish or chicken. Of course it’s no cook and only requires you to mix the ingredients together and let them sit for a little while to allow the flavors to mingle. You can leave the jalapeno out or reduce the amount if you have kids like mine who don’t like the heat.
- 2 cups fresh pineapple diced small
- approx 12 cherry tomatoes quartered
- 1/4 red onion diced small
- 1/2 jalapeno pepper seeded, diced small
- 1/4 cup chopped cilantro
- 1/2 tsp salt or to taste.
Chop all the ingredients as described.
Mix them all together in a bowl and let sit for an hour or more to allow flavors to develop.
